What is a smoke-ring?
According to the USDA;
”The reddish-brown color found in the outer edges of real wood-smoked BBQ is caused by the
natural wood smoke reacting with the myoglobin contained in fresh meat”.
A smoke ring is a pink discoloration of meat just under the surface caused by nitric acid building up
in the surface of meat. This nitric acid is formed when nitrogen dioxide from wood combustion in
smoke mixes with water in the meat. Basically it is a chemical reaction between the smoke and the
meat.
It is not a sign of being undercooked, but instead a way to tell that the meat is fully cooked with real
hardwoods for a long period of time at a low temperature.
